Everything about steaks, slow-roasts, sauces, sides, and desserts that sail smoothly—plus how we finish meats safely in a yacht galley.

🥩Which meats work best on a yacht?
Cuts that finish cleanly and slice well are ideal: beef tenderloin, NY strip (sliced), short rib, lamb lollipops, churrasco, mojo pork, adobo or herb-roasted chicken, and house sausage bites. We avoid heavy smoke and lots of bone when space is tight.
🔥Can you grill or smoke onboard?
Open flames and smoking are typically not allowed underway. We pre-sear or slow-cook ashore, then finish onboard with yacht-smart gear (induction plancha, salamander, torches) for crust and heat without smoke. If a dockside grill is permitted, we’ll coordinate with the captain.
🌡️How do you hit exact doneness at sea?
For premium cuts we use sous-vide or low-temp roasting for even doneness, then hard-sear on an induction plancha. We probe every batch, rest in cambros, and slice to order for service—so your medium-rare stays medium-rare.
🔪Carving station or handhelds—what’s smarter on a boat?
Both work. Carving (tenderloin, prime rib, porchetta) feels luxe and can be staged at the dock or on a stable deck. Handhelds (steak chimichurri sliders, mojo pork buns, Korean short-rib tacos) are splash-safe and easy during cruising. We can mix formats by course.
🥗What salads and sides pair best with meat at sea?
Bright, herb-forward sides keep things light: shaved fennel-citrus salad, watermelon-mint with feta, little-gem caesar, grilled asparagus with lemon, roasted potato salad with dill and capers, elote-style corn, chimichurri, horseradish crema, and citrus-garlic slaw.
Do you offer halal, kosher-style, grass-fed, or specific sourcing?
Yes—on request we source USDA Prime/Choice, grass-fed, Wagyu, heritage pork, halal, and kosher-style (note: not a kosher kitchen). Traceability and labels are provided in your proposal; some items require extra lead time.
⚖️How much meat should we plan per guest?
For mixed menus, plan 6–8 oz cooked beef or pork per guest (or 5–6 oz if paired with chicken/sausages). For slider/taco formats, budget 2–3 pieces pp/hour for heavy cocktail service. We’ll calibrate for trip length and appetite.
🥣Do sauces get messy on deck?
We use yacht-safe plating: brush-on glazes, thickened reductions, and squeeze-bottle finishes that don’t run. Sauces (chimichurri, peppercorn, au jus) are served in ramekins with lined trays. No red-wine splatter on white cushions—promise.
🍰What desserts complement a meat-forward menu?
Lighter finishes win: citrus olive-oil cake, strawberry shortcake jars, berry pavlova, key-lime tartlets, chocolate pot-de-crème shots with sea salt. All are chill-friendly and easy to pass while cruising.
🌱Can you include options for non-meat eaters?
Absolutely. We can add hearty plant dishes (wild-mushroom arancini, roasted veggie brochettes, caprese skewers) and label everything clearly. Gluten-aware, dairy-free, and kid-friendly options are available on request.
